Honey is a natural carbohydrate food and one of the purest foods known to humankind. It is high in energy and contains natural sugars, vitamins, minerals, proteins and antibiotic agents.
People since the earliest times have believed in the health value of honey. It has natural anti-bacterial qualities and is metabolised by the body much more quickly than refined sugars.
Honey is produced from the nectar of flowers and can have many variations of colour, flavour and aroma. This is determined by the type of flower where the bee gathers nectar. For example, the flowers of the bright yellow oilseed rape plant give a light creamy honey, whilst the fir tree gives a stronger darker coloured honey.
The variety of honey available can often be confusing. So, which honey is the most beneficial to buy? Often it is down to personal taste. The colour and texture of a particular honey varies depending where the bee has gathered nectar. For example, honey from a pine forest will be darker in colour and stronger in taste, whereas honey from the bright yellow oil-seed rape flower will be a very light colour and creamy in texture.
